Instructions
Step 1: Mix warm water, yeast, and brown sugar in a bowl and let it sit until foamy (5–10 minutes).
Step 2: Add salt and flour, then knead until a soft dough forms.
Step 3: Let dough rest for 10 minutes, then divide into long ropes.
Step 4: Cut ropes into bite-sized pieces.
Step 5: Boil water and baking soda, then drop in dough pieces for 20–30 seconds.
Step 6: Bake at 425°F for 10–12 minutes until golden brown.
Step 7: Brush warm pretzel bites with melted butter and toss in cinnamon sugar.
Notes
For extra softness, brush bites with butter again right before serving. Saf-Instant yeast or Fleischmann’s RapidRise work well for this dough.
