Equipment

  • Air fryer Any basket-style air fryer works well you don't need anything fancy, just something that circulates hot air evenly.
  • Mixing bowl For tossing the salmon cubes with butter and seasoning before they go in. Nothing special just something big enough to toss without spilling.
  • Sharp knife Makes cubing the salmon quick and clean, which matters more than you'd think even pieces cook evenly and crisp up the same way.
  • Cutting board A dedicated one for fish if you have it, just to keep flavors from lingering into other foods.
  • Paper towels For patting the salmon dry before seasoning this small step is what gets you that crisp edge instead of a soft one.

Ingredients
  

  • 1 lb salmon fillet skin removed, cut into 1-inch cubes
  • 2 tbsp butter or beef tallow melted
  • 1 tsp fine sea salt
  • ½ tsp black pepper omit for strict carnivore
  • ½ tsp garlic powder optional, omit for strict carnivore

Instructions
 

  • Pat the salmon dry. This is the single most important step for crispiness any surface moisture steams instead of crisps in the air fryer.
  • Toss. In a bowl, combine the salmon cubes with melted butter or tallow, salt, and pepper (if using). Toss gently so every piece is coated.
  • Arrange in a single layer. Place the salmon bites in the air fryer basket with a little space between each piece crowding traps steam and softens the crust.
  • Air fry at 400°F for 8–10 minutes, shaking the basket halfway through, until the edges are deeply golden and the salmon flakes easily.
  • Rest for a minute or two before serving this lets the crust set and the inside finish gently.
