Measuring cups and spoons
White ceramic ramekins or small jars
- 8 oz 225 g cream cheese, softened
- 1 cup heavy cream
- 4 large egg yolks
- 2 tbsp butter melted
- Pinch of salt optional
Gently heat the heavy cream in a small saucepan over low heat until just warm, not boiling.
In a mixing bowl, whisk or blend the softened cream cheese, melted butter, egg yolks, and salt until completely smooth.
Slowly drizzle the warm cream into the egg mixture while whisking continuously to temper the yolks.
Return the mixture to the saucepan and cook over low heat for 3–5 minutes, stirring constantly, until thickened to a custard consistency.
Spoon the pudding into ramekins or jars and chill for at least 2 hours before serving.
- Texture firms significantly after chilling overnight.
- Best made with full-fat dairy for proper consistency.
- Avoid high heat to maintain a smooth custard.
