Equipment

  • Small saucepan
  • Mixing bowl
  • Whisk or immersion blender
  • Measuring cups and spoons
  • White ceramic ramekins or small jars

Ingredients

  • 8 oz 225 g cream cheese, softened
  • 1 cup heavy cream
  • 4 large egg yolks
  • 2 tbsp butter melted
  • Pinch of salt optional

Instructions

  • Gently heat the heavy cream in a small saucepan over low heat until just warm, not boiling.
  • In a mixing bowl, whisk or blend the softened cream cheese, melted butter, egg yolks, and salt until completely smooth.
  • Slowly drizzle the warm cream into the egg mixture while whisking continuously to temper the yolks.
  • Return the mixture to the saucepan and cook over low heat for 3–5 minutes, stirring constantly, until thickened to a custard consistency.
  • Spoon the pudding into ramekins or jars and chill for at least 2 hours before serving.

Notes

  • Texture firms significantly after chilling overnight.
  • Best made with full-fat dairy for proper consistency.
  • Avoid high heat to maintain a smooth custard.
