Grilled Vegetable Platter

An easy and colorful grilled vegetable platter with marinated veggies, crispy bacon wrapped and creamy burrata. A summer favorite!

- 2 zucchinis sliced lengthwise
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 head cauliflower cut into florets
- 1 red onion sliced into thick rings
- 1 bunch asparagus ends trimmed
- 6 slices thin-cut bacon
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 ball of burrata cheese
Slice zucchini, bell peppers, onion, and cauliflower. Trim asparagus.
In a large bowl, combine olive oil, balsamic vinegar, garlic powder, Italian seasoning, salt, and pepper. Add veggies and toss.
Wrap 2-3 spears of asparagus with a slice of bacon each. Set aside.
Preheat grill to medium-high. Add marinated vegetables directly to the grill or grill basket. Cook 10–12 minutes, turning once.
Add bacon wrapped asparagus to the grill. Cook 5–7 minutes, turning as bacon crisps.
Arrange grilled vegetables and grilled bacon wrapped asparagus on a platter. Place the burrata cheese in the center and drizzle with balsamic glaze if desired.

Burrata can be swapped with mozzarella balls if needed.

Bacon wrapped asparagus can be baked instead of grilled just roast at 400°F for 20 minutes.
