Grilled Vegetable Platter

An easy and colorful grilled vegetable platter with marinated veggies, crispy bacon wrapped and creamy burrata. A summer favorite!

Equipment

  • Grill or grill pan
  • Grill tongs
  • Large mixing bowl
  • Basting brush
  • Cutting board and sharp knife
  • Grill basket (optional)

Ingredients
  

  • 2 zucchinis sliced lengthwise
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 head cauliflower cut into florets
  • 1 red onion sliced into thick rings
  • 1 bunch asparagus ends trimmed
  • 6 slices thin-cut bacon
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 ball of burrata cheese

Instructions
 

  • Slice zucchini, bell peppers, onion, and cauliflower. Trim asparagus.
  • In a large bowl, combine olive oil, balsamic vinegar, garlic powder, Italian seasoning, salt, and pepper. Add veggies and toss.
  • Wrap 2-3 spears of asparagus with a slice of bacon each. Set aside.
  • Preheat grill to medium-high. Add marinated vegetables directly to the grill or grill basket. Cook 10–12 minutes, turning once.
  • Add bacon wrapped asparagus to the grill. Cook 5–7 minutes, turning as bacon crisps.
  • Arrange grilled vegetables and grilled bacon wrapped asparagus on a platter. Place the burrata cheese in the center and drizzle with balsamic glaze if desired.

Notes

  • Burrata can be swapped with mozzarella balls if needed.
  • Bacon wrapped asparagus can be baked instead of grilled just roast at 400°F for 20 minutes.
