Ingredients
  

  • 4 medium-sized potatoes Yukon Gold or Russet
  • 2 tablespoons olive oil
  • 2 tablespoons melted butter
  • 4 cloves garlic minced
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon fresh thyme chopped
  • 1 teaspoon fresh rosemary chopped
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Heat your pizza oven to around 400°F (200°C). If using a wood-fired pizza oven, ensure the temperature is consistent and the heat is evenly distributed.
  • Wash and scrub the potatoes thoroughly.
  • Place each potato on a cutting board. Use two wooden spoons or chopsticks on either side of the potato to prevent cutting all the way through. Slice the potato thinly, about 1/8 inch apart, stopping just before you reach the bottom so that the slices remain attached at the base.
  • In a small bowl, combine the olive oil, melted butter, minced garlic, sea salt, black pepper, thyme, and rosemary.
  • Gently fan out the potato slices and brush the mixture generously over each potato, making sure to get some of the mixture in between the slices.
  • Place the potatoes in a cast-iron skillet.
  • Put the skillet in the preheated pizza oven.
  • Cook for about 30-40 minutes, or until the potatoes are crispy on the outside and tender on the inside. Baste frequently and rotate the skillet or stone occasionally to ensure even cooking.
  • Ten minutes before the potatoes are done, sprinkle the grated Parmesan cheese over the tops of the potatoes.
  • Continue cooking until the cheese is melted and golden brown.
  • Remove the potatoes from the oven and let them cool for a few minutes.
  • Garnish with freshly chopped chives or parsley, sprinkle of bacon and a dollop of sour cream before serving.

Notes

Baste and rotate the skillet occasionally for uniform crispiness.
