Heat your pizza oven to around 400°F (200°C). If using a wood-fired pizza oven, ensure the temperature is consistent and the heat is evenly distributed.
Wash and scrub the potatoes thoroughly.
Place each potato on a cutting board. Use two wooden spoons or chopsticks on either side of the potato to prevent cutting all the way through. Slice the potato thinly, about 1/8 inch apart, stopping just before you reach the bottom so that the slices remain attached at the base.
In a small bowl, combine the olive oil, melted butter, minced garlic, sea salt, black pepper, thyme, and rosemary.
Gently fan out the potato slices and brush the mixture generously over each potato, making sure to get some of the mixture in between the slices.
Place the potatoes in a cast-iron skillet.
Put the skillet in the preheated pizza oven.
Cook for about 30-40 minutes, or until the potatoes are crispy on the outside and tender on the inside. Baste frequently and rotate the skillet or stone occasionally to ensure even cooking.
Ten minutes before the potatoes are done, sprinkle the grated Parmesan cheese over the tops of the potatoes.
Continue cooking until the cheese is melted and golden brown.
Remove the potatoes from the oven and let them cool for a few minutes.
Garnish with freshly chopped chives or parsley, sprinkle of bacon and a dollop of sour cream before serving.
Notes
Baste and rotate the skillet occasionally for uniform crispiness.
