Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons matcha green tea powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting optional

Instructions
 

  • In a mixing bowl, whisk together flour, sugar, matcha powder, baking powder, and salt until well combined.
  • In another bowl, whisk milk, eggs, vanilla, and oil (or butter) until smooth.
  • Pour wet ingredients into dry and mix just until combined. Do not overmix.
  • Grease the rice cooker pot, pour in batter, and level the top.
  • Close the lid and set the rice cooker to 'Cook'. Cook for 30-40 minutes or until a toothpick comes out clean.
  • Let cake cool slightly, remove from pot, and dust with powdered sugar if desired. Slice and serve!

Notes

Pair with whipped cream for a sweet, elegant finish.
