Ingredients
  

  • 2 racks of baby back ribs
  • 2 tablespoons olive oil
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper optional, for heat
  • 1 cup BBQ sauce your favorite variety

Instructions
 

  • Remove the membrane from the back of the ribs. Use a knife to loosen it, then peel it off with a paper towel for grip.
  • Rub both sides of the ribs with olive oil.
  • Combine paprika, garlic powder, onion powder, black pepper, salt, and cayenne in a small bowl.
  • Generously coat the ribs with the spice mix, pressing it in to adhere.
  • Heat your pizza oven to 450–500°F (230–260°C). Use wood or a combination of wood and charcoal for a rich, smoky flavor.
  • Let the oven reach a steady, consistent heat.
  • Place the ribs on a pizza stone or heat-safe tray, bone-side down.
  • Insert into the pizza oven, keeping them in a central spot for even cooking.
  • Cook for 30 minutes, turning occasionally to ensure even charring.
  • Brush the ribs with BBQ sauce and return them to the oven for an additional 15–20 minutes, allowing the sauce to caramelize.
  • Remove the ribs from the oven and let them rest for 5 minutes.
  • Slice between the bones for individual portions and serve hot.
