Remove the membrane from the back of the ribs. Use a knife to loosen it, then peel it off with a paper towel for grip.
Rub both sides of the ribs with olive oil.
Combine paprika, garlic powder, onion powder, black pepper, salt, and cayenne in a small bowl.
Generously coat the ribs with the spice mix, pressing it in to adhere.
Heat your pizza oven to 450–500°F (230–260°C). Use wood or a combination of wood and charcoal for a rich, smoky flavor.
Let the oven reach a steady, consistent heat.
Place the ribs on a pizza stone or heat-safe tray, bone-side down.
Insert into the pizza oven, keeping them in a central spot for even cooking.
Cook for 30 minutes, turning occasionally to ensure even charring.
Brush the ribs with BBQ sauce and return them to the oven for an additional 15–20 minutes, allowing the sauce to caramelize.
Remove the ribs from the oven and let them rest for 5 minutes.
Slice between the bones for individual portions and serve hot.
