Prepare the Roast: Preheat your oven to 450°F (230°C). Pat the prime rib dry with paper towels and place it on a roasting rack in a pan.
Season: Rub the roast with olive oil, then season generously with salt, pepper, minced garlic, and chopped herbs.
Roast: Place the prime rib in the oven and roast for 15 minutes. Then, lower the temperature to 325°F (165°C) and continue cooking until the internal temperature reaches your desired level (about 130°F for medium-rare).
Rest: Once cooked, remove the roast from the oven and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute for a more flavorful bite.
Serve: Slice the roast and serve it with beef broth or your favorite gravy on the side.
Notes
Serve with roasted vegetable, fresh greens and your gravy of choice.
