Ingredients
  

  • 1 cup pumpkin puree
  • 1 box 3.4 oz instant vanilla pudding mix
  • 2 cups cold milk
  • 1 tsp pumpkin pie spice
  • 8 oz whipped topping divided
  • 1 1/2 cups crushed graham crackers or gingersnap cookies
  • Optional: caramel drizzle toasted pecans, or extra whipped cream for topping

Instructions
 

  • Make the pumpkin cream: In a bowl, whisk together pumpkin puree, vanilla pudding mix, milk, and pumpkin pie spice until smooth. Chill for 30 minutes to thicken.
  • Fold in whipped topping: Once chilled, gently fold in half of the whipped topping to lighten the pumpkin mixture.
  • Layer the parfaits: In 6 clear glasses, alternate layers of crushed cookies, pumpkin mixture, and whipped topping.
  • Finish and chill: Top each parfait with caramel drizzle, a sprinkle of pecans, or extra whipped cream. Chill until ready to serve.

Notes

  • Chill the pumpkin mixture at least 30 minutes for best consistency.
  • Top just before serving for the freshest look and taste.
