This moist and fluffy apple cinnamon cake is made entirely in your rice cooker! A simple and cozy treat for the whole family.

Equipment

  • Rice cooker (with a 'Cake' or regular setting)
  • Mixing bowls (small, medium, and large)
  • Measuring cups and spoons
  • Whisk
  • Silicone spatula
  • Non-stick spray or oil

Ingredients
  

  • cups 190g all-purpose flour
  • ¾ cup 150g granulated sugar
  • tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup 120ml milk
  • ½ cup 120ml vegetable oil or melted butter
  • 1 tsp vanilla extract
  • apples peeled and diced, about 1 cup
  • 1 tbsp brown sugar
  • ½ tsp cinnamon

Instructions
 

  • Grease the Pot: Grease the rice cooker pot with oil or non-stick spray.
  • Prepare Apple Mix: In a small bowl, combine diced apples with brown sugar and cinnamon. Set aside.
  • Mix Dry Ingredients: In a large bowl, whisk together flour, granulated sugar, baking powder, cinnamon, and salt.
  • Mix Wet Ingredients: In a separate bowl, beat eggs, then add milk, oil, and vanilla extract. Mix until combined.
  • Combine Wet & Dry: Pour wet mixture into dry ingredients and stir until just combined.
  • Fold in Apples: Gently fold in half of the apple mixture.
  • Pour & Top: Pour the batter into the greased rice cooker pot and top with remaining apples, pressing them lightly into the batter.
  • Cook: Close the lid and cook on the 'Cake' setting or regular rice cycle for 45–60 minutes, or until a toothpick comes out clean.
  • Cool & Flip: Let the cake rest 5–10 minutes before flipping onto a plate.

Notes

You can swap the oil for melted butter for a richer flavor. Make sure to grease the rice cooker pot well to avoid sticking.
