Ingredients

peeled and diced, about 1 cup

Instructions
Grease the Pot: Grease the rice cooker pot with oil or non-stick spray.
Prepare Apple Mix: In a small bowl, combine diced apples with brown sugar and cinnamon. Set aside.
Mix Dry Ingredients: In a large bowl, whisk together flour, granulated sugar, baking powder, cinnamon, and salt.
Mix Wet Ingredients: In a separate bowl, beat eggs, then add milk, oil, and vanilla extract. Mix until combined.
Combine Wet & Dry: Pour wet mixture into dry ingredients and stir until just combined.
Fold in Apples: Gently fold in half of the apple mixture.
Pour & Top: Pour the batter into the greased rice cooker pot and top with remaining apples, pressing them lightly into the batter.
Cook: Close the lid and cook on the 'Cake' setting or regular rice cycle for 45–60 minutes, or until a toothpick comes out clean.
Cool & Flip: Let the cake rest 5–10 minutes before flipping onto a plate.
Notes
You can swap the oil for melted butter for a richer flavor. Make sure to grease the rice cooker pot well to avoid sticking.
