Savory Coconut Curry Rice

Ingredients
  

  • 2 cups jasmine rice rinsed
  • 1 can 13.5 oz coconut milk
  • 1 cup vegetable or chicken broth
  • 1 tablespoon curry powder
  • 1 teaspoon salt adjust to taste
  • 1 tablespoon sugar
  • 1/2 teaspoon turmeric powder optional
  • 1/4 teaspoon black pepper
  • 1 cup mixed vegetables peas, carrots, and bell peppers (optional)
  • Fresh cilantro for garnish optional
  • Lime wedges for serving optional

Instructions
 

  • In your rice cooker, add the rinsed jasmine rice, coconut milk, broth, curry powder, salt, sugar, turmeric (if using), and black pepper.
  • If using mixed vegetables, layer them on top of the rice without stirring.
  • Close the lid of the rice cooker, select the ‘white rice’ setting, and start cooking. The cooker will automatically switch to ‘keep warm’ once done.
  • Once the rice is finished cooking, let it sit for 5 minutes before opening the lid. Fluff with a fork and mix in the vegetables if added.

Notes

Garnish with fresh cilantro and serve with lime wedges.
