Ingredients
  

  • ½ cup unsalted butter melted
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup chocolate chips
  • Vanilla ice cream for serving

Instructions
 

  • Preheat the Pizza Oven: Ensure your pizza oven is heated to 350°F (175°C).
  • Mix Wet Ingredients: In a mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the egg and vanilla extract, and mix until fully combined.
  • Add Dry Ingredients: Stir in the all-purpose flour, baking soda, and salt until just combined.
  • Fold in Chocolate Chips: Gently fold the chocolate chips into the dough.
  • Prepare the Skillet: Grease an 8-inch cast iron skillet and press the cookie dough evenly into the skillet.
  • Bake: Place the skillet in the preheated pizza oven and bake for about 18 minutes, or until the edges are crisp and the center is just set.
  • Cool and Serve: Allow the cookie to cool for 5 minutes. Top with a scoop of vanilla ice cream and serve warm.

Notes

  • For an extra gooey center, underbake the cookie by 1-2 minutes.
  • Dough can be made ahead and refrigerated for up to 48 hours.
  • Best served warm with a big scoop of vanilla ice cream.
