Slow Cooker Overnight Apple Cinnamon Oatmeal

Equipment

  • Slow cooker (3–6 quart works well)
  • Measuring cups and spoons
  • Cutting board
  • Knife or apple peeler
  • Spoon or spatula for stirring
  • Cooking spray or butter (for greasing)
  • Optional: parchment paper liner or ceramic insert

Ingredients
  

  • 1 cup steel-cut oats
  • 4 cups water or milk or a mix of both
  • 2 apples peeled and diced
  • 2 tbsp brown sugar or maple syrup
  • 1 tsp ground cinnamon
  • ½ tsp vanilla extract
  • Pinch of salt
  • Optional: raisins chopped walnuts, or flaxseed

Instructions
 

  • Lightly grease the slow cooker insert with butter or cooking spray.
  • Add steel-cut oats, water and/or milk, diced apples, brown sugar (or maple syrup), cinnamon, vanilla, and salt.
  • Stir gently to combine.
  • Cover and cook on low for 6–8 hours overnight.
  • In the morning, stir well and add a splash more milk if you want it looser.
  • Serve warm with your favorite toppings.

Notes

  • If your slow cooker runs hot, line the insert with parchment or use a ceramic insert to prevent scorching around the edges.
  • For a thinner consistency, stir in extra milk after cooking.
  • Firm apples hold up best for overnight cooking.
