Slow Cooker Overnight Apple Cinnamon Oatmeal

Slow cooker (3–6 quart works well)
Measuring cups and spoons
Cutting board
Knife or apple peeler
Spoon or spatula for stirring
Cooking spray or butter (for greasing)
Optional: parchment paper liner or ceramic insert
- 1 cup steel-cut oats
- 4 cups water or milk or a mix of both
- 2 apples peeled and diced
- 2 tbsp brown sugar or maple syrup
- 1 tsp ground cinnamon
- ½ tsp vanilla extract
- Pinch of salt
- Optional: raisins chopped walnuts, or flaxseed
Lightly grease the slow cooker insert with butter or cooking spray.
Add steel-cut oats, water and/or milk, diced apples, brown sugar (or maple syrup), cinnamon, vanilla, and salt.
Stir gently to combine.
Cover and cook on low for 6–8 hours overnight.
In the morning, stir well and add a splash more milk if you want it looser.
Serve warm with your favorite toppings.
- If your slow cooker runs hot, line the insert with parchment or use a ceramic insert to prevent scorching around the edges.
- For a thinner consistency, stir in extra milk after cooking.
- Firm apples hold up best for overnight cooking.
