  • Cast iron skillet (10-inch)
  • Mixing bowl
  • Whisk
  • Spatula
  • Oven mitts

Ingredients
  

  • 6 eggs
  • ½ cup milk
  • 1 cup baby spinach chopped
  • ½ cup crumbled feta
  • ½ small red onion finely chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional 1 store-bought pie crust

Instructions
 

  • Preheat the oven to 180°C/350°F.
  • Heat olive oil in a skillet and sauté the onions until soft.
  • Whisk eggs, milk, salt, and pepper in a bowl. Stir in spinach and feta.
  • Pour the egg mixture into the skillet over the softened onions. (Add pie crust first if using.)
  • Bake for 25–30 minutes until the quiche is set and golden.
  • Cool slightly, slice into wedges, and serve warm.

Notes

  • If using a pie crust, check package directions for any prebaking recommendations.
  • Feel free to swap out greens or cheeses depending on what's in your fridge!
