This wood-fired peach cobbler is packed with sweet, juicy peaches and topped with a golden, fluffy batter. Baked in cast iron for a rustic finish.

Ingredients
  

  • 4 ripe peaches sliced
  • ¼ cup sugar
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • 1 cup all-purpose flour
  • ½ cup sugar for batter
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¾ cup milk
  • ¼ cup melted butter

Instructions
 

  • In a mixing bowl, combine sliced peaches with ¼ cup sugar, lemon juice, and cinnamon. Stir well and set aside.
  • In another bowl, whisk together flour, ½ cup sugar, baking powder, and salt. Stir in milk and melted butter until smooth.
  • Grease a cast iron skillet with butter or oil. Pour the batter into the skillet and spread it evenly.
  • Spoon the peach mixture over the batter don’t stir! The batter will rise around the fruit as it bakes.
  • Place the skillet in your preheated wood-fired oven. Bake for 30–35 minutes or until the top is golden and the peach juices are bubbling.

Notes

  • Use unsalted butter for better control of flavor.
  • If your peaches are extra sweet, reduce the added sugar slightly.
