Wood Fired Peach Cobbler

This wood-fired peach cobbler is packed with sweet, juicy peaches and topped with a golden, fluffy batter. Baked in cast iron for a rustic finish.

- 4 ripe peaches sliced
- ¼ cup sugar
- 1 tbsp lemon juice
- 1 tsp cinnamon
- 1 cup all-purpose flour
- ½ cup sugar for batter
- 1 tsp baking powder
- ¼ tsp salt
- ¾ cup milk
- ¼ cup melted butter
In a mixing bowl, combine sliced peaches with ¼ cup sugar, lemon juice, and cinnamon. Stir well and set aside.
In another bowl, whisk together flour, ½ cup sugar, baking powder, and salt. Stir in milk and melted butter until smooth.
Grease a cast iron skillet with butter or oil. Pour the batter into the skillet and spread it evenly.
Spoon the peach mixture over the batter don’t stir! The batter will rise around the fruit as it bakes.
Place the skillet in your preheated wood-fired oven. Bake for 30–35 minutes or until the top is golden and the peach juices are bubbling.

Use unsalted butter for better control of flavor.

If your peaches are extra sweet, reduce the added sugar slightly.
