Zesty Chili Lime Corn on the Cob

Ingredients
4
ears of corn
husks removed
3
tbsp
softened butter
½
tsp
chili powder
Zest and juice of ½ lime
Pinch
of salt
2
tbsp
chopped cilantro
optional
Instructions
In a small bowl, mix the softened butter with chili powder, lime zest, lime juice, and a pinch of salt until well combined.
Brush each ear of corn with half of the butter mixture, making sure to coat all sides.
Wrap each corn cob tightly in foil.
Place wrapped corn in a preheated pizza oven and roast for 12-15 minutes, turning occasionally, until kernels are tender and slightly charred.
Carefully unwrap corn, brush with remaining butter mixture, and sprinkle with chopped cilantro if using. Serve immediately.
Notes
If you don’t have a pizza oven, you can roast the corn on a grill or in a 425°F conventional oven instead.
