Zesty Chili Lime Corn on the Cob

Equipment

  • Pizza oven
  • Mixing bowl
  • Basting brush
  • Aluminum foil
  • Knife and zester
  • Small serving bowls

Ingredients
  

  • 4 ears of corn husks removed
  • 3 tbsp softened butter
  • ½ tsp chili powder
  • Zest and juice of ½ lime
  • Pinch of salt
  • 2 tbsp chopped cilantro optional

Instructions
 

  • In a small bowl, mix the softened butter with chili powder, lime zest, lime juice, and a pinch of salt until well combined.
  • Brush each ear of corn with half of the butter mixture, making sure to coat all sides.
  • Wrap each corn cob tightly in foil.
  • Place wrapped corn in a preheated pizza oven and roast for 12-15 minutes, turning occasionally, until kernels are tender and slightly charred.
  • Carefully unwrap corn, brush with remaining butter mixture, and sprinkle with chopped cilantro if using. Serve immediately.

Notes

If you don’t have a pizza oven, you can roast the corn on a grill or in a 425°F conventional oven instead.
