Baked Feta Pasta with Cherry Tomatoes and Spinach

If you’ve seen baked feta pasta all over Pinterest and figured it was one of those recipes that looks better than it tastes, this one will change your mind. It’s just a block of feta and a pan of cherry tomatoes, roasted until soft, then mashed together into a sauce. No roux, no cream, no standing over a pot stirring.

It comes together in about 35 minutes, most of which is hands-off oven time, and it’s the kind of dinner that looks like more effort than it actually took.

The whole recipe rests on one trick: heat softens feta until it’s spreadable, and roasting concentrates the tomatoes into something jammy and sweet. Mash the two together right in the baking dish and you’ve got a sauce with almost no work involved.

This dish went viral on TikTok in 2021, but the idea itself is much older it’s a Finnish home-cooking staple called uunifeta, where baked feta and tomatoes have been served over pasta for years. The version that spread online just gave it a name people could search for.

Ingredients

For the bake:

  • 1 block feta cheese (400g / 14oz)
  • 300g cherry tomatoes
  • 4 garlic cloves
  • 3 tbsp olive oil
  • ½ tsp Italian seasoning
  • ½ tsp chili flakes
  • Salt and pepper

For the pasta:

350g penne pasta
2 cups baby spinach
¼ cup fresh basil
1 lemon, zested (optional)

Instructions

  1. Heat the oven. Preheat to 200°C (400°F).
  2. Assemble the bake. Set the feta in the middle of a deep baking dish. Scatter the cherry tomatoes and garlic around it. Drizzle with olive oil and sprinkle over the Italian seasoning, chili flakes, salt, and pepper.
  3. (Optional step to replace a large piece of feta: I cube my feta up before baking – find it easier to mix around and I end up with little lumps of feta – YUM)
  4. Roast, 25–30 minutes. Bake until the tomatoes have burst and collapsed and the feta is soft enough to smoosh with a fork.
  5. Cook the pasta. While the feta bakes, cook the penne in salted boiling water until al dente. Scoop out 1 cup of pasta water before draining.
  6. Mash the sauce. Pull the dish from the oven and mash the feta and tomatoes together with a fork, right in the dish, until you have a rough, creamy sauce.
  7. Combine. Add the drained pasta and spinach to the dish and toss well, loosening with splashes of reserved pasta water until everything is glossy and coated.
  8. Finish and serve. Stir through the basil and lemon zest if using. Taste, adjust the salt and pepper, and serve warm.

Top Tips

  • Use block feta, not crumbled. Crumbled feta is usually lower fat and won’t melt down into a sauce the same way. A whole block holds its shape while roasting and then mashes smooth.
  • Don’t skip the pasta water. The starchy water is what turns “feta and tomatoes on top of pasta” into an actual sauce that clings to every piece. Add it a splash at a time until the texture looks right.
  • Check the tomatoes at 25 minutes. Oven temperatures vary, and you want them fully burst and collapsing, not just softened. If they’re not there yet, give them another 5 minutes.
  • Salt with a light hand at first. Feta is already salty, and it gets saltier as the liquid reduces in the oven. Taste before you season the finished pasta.
  • Warm the dish, not just the pasta, if reheating. Reheating straight from the fridge can make the sauce split slightly. A splash of water or olive oil stirred in while reheating brings it back together.

Recipe Variations

Baked feta dip: Skip the pasta entirely and serve the roasted feta and tomatoes with warm crusty bread or crackers for dipping. Ready in the same 30 minutes, no cooking pasta required.

Spicy baked feta pasta: Double the chili flakes and add a pinch of crushed red pepper to the finished dish for real heat, not just a background warmth.

Baked feta pasta with chicken: Stir shredded rotisserie chicken through at the same time as the pasta and spinach for a heartier, more filling dinner.

One-pan version: Cook the pasta directly in the baking dish alongside the feta for the final 10–12 minutes of roasting, using extra stock or water so it can absorb liquid as it cooks. Fewer dishes, though the sauce is slightly less creamy.

Baked feta pasta with sun-dried tomatoes: Add a handful of chopped sun-dried tomatoes with the cherry tomatoes for a deeper, more concentrated tomato flavor.

Low-carb version: Swap the pasta for roasted spiralized zucchini or a bag of cauliflower rice, stirred through at the very end so it doesn’t turn watery.

How to Store and Reheat

Refrigerating: Store leftovers in an airtight container in the fridge for up to 3 days.

Reheating: Reheat gently in a skillet over medium-low heat with a splash of water or olive oil, stirring until warmed through. A microwave works too cover loosely and stir halfway through to help the sauce come back together.

Freezing: This isn’t a great freezer candidate on its own, since the sauce can separate on thawing. If you want to freeze ahead, freeze the roasted feta and tomato mixture (before mashing) separately from cooked pasta, and combine everything fresh.
