- 1 tbsp butter
- ½ small onion finely diced
- 1 jalapeño seeded and minced
- 1 clove garlic minced
- 1 tbsp flour
- ½ cup milk
- ½ cup heavy cream
- 2 cups shredded cheddar cheese
- ½ tsp cumin
- Salt to taste
- Chopped cilantro optional
- Tortillas for serving
Melt the butter in a skillet over medium heat.
Add the onion and jalapeño. Sauté until soft, about 3-4 minutes.
Stir in the garlic and cook for another 30 seconds.
Sprinkle in the flour and cook, stirring, for 1 minute.
Slowly whisk in milk and cream until smooth and thickened.
Stir in shredded cheese until melted and velvety.
Season with cumin and salt. Garnish with chopped cilantro if using.
Warm homemade or store bought tortillas directly in the pizza oven for 30 seconds per side until lightly charred. Cut into wedges for dipping.
