Ingredients
  

  • 1 tbsp butter
  • ½ small onion finely diced
  • 1 jalapeño seeded and minced
  • 1 clove garlic minced
  • 1 tbsp flour
  • ½ cup milk
  • ½ cup heavy cream
  • 2 cups shredded cheddar cheese
  • ½ tsp cumin
  • Salt to taste
  • Chopped cilantro optional
  • Tortillas for serving

Instructions
 

  • Melt the butter in a skillet over medium heat.
  • Add the onion and jalapeño. Sauté until soft, about 3-4 minutes.
  • Stir in the garlic and cook for another 30 seconds.
  • Sprinkle in the flour and cook, stirring, for 1 minute.
  • Slowly whisk in milk and cream until smooth and thickened.
  • Stir in shredded cheese until melted and velvety.
  • Season with cumin and salt. Garnish with chopped cilantro if using.
  • Warm homemade or store bought tortillas directly in the pizza oven for 30 seconds per side until lightly charred. Cut into wedges for dipping.

Notes

  • Always use freshly grated cheese for best melt.
  • You can substitute the heavy cream with more milk for a lighter version.
