These pumpkin pie parfaits are one of my favorite quick-fix fall desserts because they look elegant but take just minutes to assemble! They feature layers of spiced pumpkin cream, crushed cookies, and fluffy whipped topping in individual glasses perfect for parties or cozy weeknight treats.

My family loves them because they taste just like pumpkin pie, but without the oven or the wait. Plus, they’re endlessly customizable you can add caramel drizzle, gingersnap crumbs, or even a sprinkle of toasted pecans for an extra crunch.

Instructions

  1. In a bowl, whisk together pumpkin puree, vanilla pudding mix, milk, and pumpkin pie spice until smooth. Chill for 30 minutes to thicken.
  2. Once chilled, gently fold in half of the whipped topping to lighten the pumpkin mixture.
  3. In 6 clear glasses, alternate layers of crushed cookies (our family likes them chunky they’re easier to eat), pumpkin mixture, and whipped topping.
  4. Top each parfait with caramel drizzle, a sprinkle of pecans, or extra whipped cream. Chill until ready to serve.
