Why You’ll Love This Recipe

  • Easy to Make: With just a few simple steps, this casserole is perfect for any cook, beginner or experienced.
  • Crowd-Pleaser: Its comforting combination of creamy potatoes and crispy cornflake topping makes it an instant favorite.
  • Versatile: Pair it with everything from roasted meats to fresh salads for a complete meal.
  • Make-Ahead Friendly: Prepare in advance and bake when ready for stress-free hosting.

What to Serve with Funeral Potatoes

Funeral potatoes are versatile and pair beautifully with many dishes. Here are some ideas:

  • Meats: Glazed ham, roasted chicken, or barbecue ribs.
  • Salads: Fresh green salads, coleslaw, or a tangy cucumber salad for balance.
  • Vegetables: Steamed green beans, roasted asparagus, or buttery peas.
  • Bread: Warm dinner rolls, homemade bread or crusty garlic bread.

Tips for Perfect Funeral Potatoes

  • Customize the Topping: Swap cornflakes for crushed Ritz crackers or panko breadcrumbs for a different texture.
  • Add Extra Flavor: Stir in cooked bacon bits, diced jalapeños, or green onions for a twist.
  • Make It Vegetarian: Use cream of mushroom soup instead of cream of chicken.

Ingredients

  • 2 pounds frozen hash brown potatoes, thawed
  • 1/2 cup unsalted butter, melted
  • 1 (10.5 oz) can cream of chicken soup (or cream of mushroom for a vegetarian option)
  • 2 cups sour cream
  • 1 medium onion, finely grated (about 1 cup)
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 cups crushed cornflakes
  • 1/4 cup unsalted butter, melted (for topping)

How to Make Funeral Potatoes

  • Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or cooking spray.
  • In a large mixing bowl, combine the thawed hash browns, 1/2 cup melted butter, cream of chicken soup, sour cream, grated onion, cheddar cheese, salt, and pepper.
  • Stir the ingredients together until they are evenly distributed and well coated.
  • Spread the potato mixture evenly into the prepared baking dish, smoothing the top for an even surface.
  • In a small bowl, mix the crushed cornflakes with 1/4 cup melted butter.
  • Evenly sprinkle the buttery cornflake mixture over the potatoes to create a crunchy topping.
  • Place the casserole dish in the preheated oven and bake for 45–50 minutes, or until the top is golden brown and the edges are bubbling.
  • Allow the casserole to rest for 5–10 minutes after removing it from the oven. This will help the layers set and make serving easier. Serve warm and enjoy its creamy, cheesy deliciousness!
