What Are the Ingredients for Vegan Tuscan White Bean Soup
1 cup cannellini beans
4 cups vegetable stock
1/2 cup carrot, diced
1/2 cup celery, diced
2 cloves garlic, minced
1 cup potatoes, diced
2 tbsp olive oil
Sea salt to taste
1 tbsp parsley, chopped, to serve
3 tbsp tomato puree
1 white onion, sliced
1 red chili, paste
1/2 tsp chili flakes
1 tbsp dried thyme
1/2 tsp dried oregano
How Do You Make White Bean Soup From Scratch
In a Dutch oven add the olive oil and heat over low to medium heat on a cooktop.
Add the carrot, potato, garlic, onion, and beans.
Stir for 4 minutes. Add the sea salt, tomato puree, thyme, oregano, and red chili paste, and stir for 2 minutes.
Pour in the vegetable stock.
Cover with a Dutch oven lid and bring to a simmer.
Cook for 40 minutes.
Stir a couple of times to make sure the soup does not stick to the bottom of the Dutch oven.
This could happen if the Dutch oven is too hot.
Add the chili flakes and parsley on top. Serve hot.
For variation add spinach or kale. Add a tin of crushed tomatoes.
For a creamier texture blend a tin of white beans with 1 cup of stock and mix through to heat before serving.
A serving variation – sprinkle with cashew parmesan.

Ingredients
