Vegan Cauliflower Celery Mushroom Soup Recipe

What Are the Ingredients for Vegan Cauliflower Celery Mushroom Soup
1 cup celery, diced
1 cup cauliflower, diced
4 cup mushroom/vegetable stock
1 cup shiitake mushroom, diced
1 tbsp olive oil
1 tbsp almond butter
1/2 tsp mint, minced
1/2 tsp sage, minced
Sea salt and pepper to taste
1 onion, chopped
2 garlic cloves, minced
1 green chili
How to Make Vegan Cauliflower Celery Mushroom Soup
In a blender, add the celery, 1/2 cup of mushroom/vegetable stock, green chili, cauliflower, garlic, onion, sage, and mint, and blend into a smooth mixture.
Add to the cast-iron Dutch oven.
Using low to medium heat – slowly heat the Dutch oven and mixture.
Add almond butter and mix well with a wooden spoon until combined.
Add the mushrooms, sea salt, and pepper.
Bring the Dutch oven to a simmer then reduce heat to a low setting. Cover and cook for 30 minutes.
Stir every 10 minutes to ensure the soup does not stick to the bottom of the pot.
Serve hot with 1 tbsp sesame seeds, 2 tbsp toasted cashew nuts, a swirl of coconut cream, and/or a drizzle of olive oil.
