Fluffy Matcha Green Tea Cake Made in a Rice Cooker

ByMichelle Updated onApril 28, 2025
Jump to Recipe - Print Recipe

There’s something magical about the aroma of matcha drifting through the kitchen, especially when it’s coming from a soft, fluffy cake that practically makes itself. This rice cooker matcha green tea cake is one of my absolute favorite go-to desserts when I want something a little special without turning on the oven.

It’s incredibly easy, family-friendly, and oh-so-pretty with that lovely green hue. My kids love it dusted with powdered sugar or paired with a dollop of whipped cream, and it always impresses guests at tea time.

Whether you’re a seasoned matcha lover or just starting to explore its earthy charm, this cake will win your heart. Best of all, you just need your rice cooker to make it happen!

Why You’ll Love This Rice Cooker Cake

This matcha cake is soft, tender, and delicately sweet with a warm, earthy flavor from the green tea powder. It’s perfect for tea lovers, busy home bakers, or anyone looking for an easy dessert with wow-factor. No oven needed, just your trusty rice cooker!

Simple Ingredients

  • All-Purpose Flour: Gives the cake structure and helps keep the texture light and fluffy.
  • Granulated Sugar: Adds sweetness to balance the slightly bitter notes of matcha.
  • Matcha Green Tea Powder: The star of the show! Adds beautiful color and distinct earthy flavor.
  • Baking Powder: Helps the cake rise and become fluffy.
  • Salt: Enhances the matcha flavor and balances sweetness.
  • Milk: Adds moisture and richness.
  • Vegetable Oil or Melted Butter: Keeps the cake moist and tender.
  • Eggs: Bind the ingredients and add structure.
  • Vanilla Extract: Adds a hint of warmth to complement the matcha.
  • Powdered Sugar (optional): For dusting on top, adding a pretty and tasty finish.

Cook and Prep Times

  • Servings: 8 slices
  • Prep Time: 15 minutes
  • Cook Time: 30-40 minutes
  • Total Time: 45-55 minutes

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons matcha green tea powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting (optional)

Instructions

  1. In a mixing bowl, whisk together flour, sugar, matcha powder, baking powder, and salt until well combined.
  2. In another bowl, whisk milk, eggs, vanilla, and oil (or butter) until smooth.
  3. Pour wet ingredients into dry and mix just until combined. Do not overmix.
  4. Grease the rice cooker pot, pour in batter, and level the top.
  5. Close the lid and set the rice cooker to ‘Cook’. Cook for 30-40 minutes or until a toothpick comes out clean.
  6. Let cake cool slightly, remove from pot, and dust with powdered sugar if desired. Slice and serve!

Top Tips

  • Lightly grease the rice cooker to prevent sticking and ensure easy removal.
  • Sift the matcha powder with the flour for a smoother batter and even green color.
  • Avoid overmixing once wet and dry ingredients combine to keep the cake fluffy.
  • If your rice cooker turns off early, let it rest for 5 minutes and then restart the cook cycle.
  • Dust with powdered sugar or pair with whipped cream for a sweet, elegant finish.

Recipe Variations

  • Swap vanilla extract for almond or coconut extract for a unique twist.
  • Add white chocolate chips to the batter for extra sweetness.
  • Use oat milk or almond milk as a dairy-free alternative.
  • Add a teaspoon of lemon zest for a citrusy touch.

Recommended Equipment

  • Rice cooker
  • Mixing bowls
  • Whisk
  • Rubber spatula
  • Measuring cups and spoons
  • Wire cooling rack

Make Ahead Tips

You can prepare the dry ingredients the night before. Store the batter separately from the wet mixture and combine them right before cooking for freshest results.

How to Store and Reheat

Store leftover slices in an airtight container at room temperature for 1-2 days or in the fridge for up to 4 days. Reheat in the microwave for 10-15 seconds to soften.

What To Serve With This Recipe

  • A hot cup of green tea or jasmine tea
  • Fresh berries on the side
  • Lightly sweetened whipped cream
  • Vanilla yogurt for breakfast pairing
