  • 1 cup Arborio rice
  • 2 cups warm vegetable broth
  • 2 cups sliced mushrooms

Quick Rice Cooker Parmesan Risotto

Ingredients

  • 1 tbsp butter
  • 1 minced shallot
  • 2 garlic cloves
  • 3 cups chicken stock
  • 1 ½ cups Arborio rice
  • ½ cup half and half
  • 1 cup grated Parmesan
  • Parsley for garnish

Instructions

  1. Sauté garlic & shallot in butter (pan or rice cooker).
  2. Transfer to rice cooker; add rice.
  3. Set to Quick Rice for 35 minutes.
  4. Add stock and half & half; stir.
  5. Cook until creamy.
  6. Stir in Parmesan and serve.
