Make-Ahead Tips
You can pre-slice the bell peppers and grate the carrots ahead of time and store them in the fridge for up to 3 days. This makes prep a breeze on cooking day.
How to Store and Reheat
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or in a saucepan with a splash of broth or water to loosen it up. The noodles may absorb some liquid, so add a little more broth if needed.
What To Serve With This Recipe
Here are some great serving suggestion to enjoy with your undon noodle dish.
1. Top with a Jammy Soft-Boiled Egg
A soft-boiled egg with a gooey center adds creaminess, protein, and that extra “yum!” factor. Just slice it in half and place it right on top of the bowl. It makes the dish feel a little more special and hearty.
2. Sprinkle with Sesame Seeds
Lightly toasted sesame seeds add a delicious crunch and nutty flavor that pairs perfectly with the sesame oil in the broth.
3. Add a Drizzle of Chili Oil or Sriracha
For spice lovers (or older kids/adults), a small drizzle of chili oil or a squirt of sriracha brings a warming kick. Serve it on the side if you’re feeding a mixed crowd.
4. Pair with Steamed Dumplings or Gyoza
Turn this into a fun Asian-inspired dinner night by serving the noodles alongside store-bought or homemade steamed dumplings. It’s great for when you want a little variety on the table.
5. Serve with a Side of Edamame
Lightly salted, steamed edamame is a healthy, protein-packed side that kids can snack on with their hands always a win at the dinner table.
6. Make a Mini Noodle Bar
Set out bowls of toppings like chopped green onions, shredded nori (seaweed), sesame seeds, boiled eggs, and chili flakes, and let everyone build their own perfect bowl. It’s a great way to get picky eaters involved and excited.
7. Serve in Fun Bowls with Chopsticks or Kid-Friendly Utensils
Presentation makes a difference! Use colorful bowls, bento boxes, or fun utensils to make the meal feel more interactive and inviting for younger kids.
