Why I don’t use boneless chicken breasts in this recipe? Because I make the recipe family-friendly and dice the fattier chicken thighs, they do not dry out like chicken breast. If you make this recipe with whole chicken breast, it will remain tender.

  • 1 cup cheese, diced
  • 1 cup celery, diced
  • 1 onion, diced
  • 1 can cream of mushroom soup
  • 2 eggs, whisked
  • Pinch of salt
  • Ground pepper
  • 1 cup chicken broth
  • 2 cups Ritz crackers, crumbled
  • 1 cup sliced mushrooms (optional)

Instructions

  • Preheat the conventional oven to 350 degrees Fahrenheit
  • Dice all ingredients
  • Place crackers in a ziplock bag and crumb them coarsely with a rolling pin or meat tenderizer.
  • Whisk eggs in a bowl.
  • Add cheese, celery, mushroom soup, chicken broth, and 1 3/4 cups of Ritz crackers to the eggs.
  • Heat the Dutch oven on the stovetop over medium-high heat.
  • Add onions and saute for 1 minute
  • Add diced chicken browning on all sides, approximately 2 minutes
  • Add egg mixture
  • Salt and pepper to taste
  • Stir, then sprinkle 1/4 of reserved cracker crumbs.
  • Cover and bake in the oven for 45 minutes at 350 degrees.
  • Garnish with lemon slices and sliced spring onions.
  • Serve and enjoy!
