There’s something magical about serving a beautiful, juicy prime rib roast to your family it feels like a holiday, no matter what day it is! This recipe is one of my favorites because it brings everyone to the table with wide eyes and hungry hearts.

The crispy, herb-crusted outside gives way to tender, melt-in-your-mouth slices on the inside. It’s fancy enough for special occasions, but honestly, it’s easy enough for a weekend dinner when you just want to spoil your crew. And the best part? You don’t need a million ingredients or culinary school skills just a few pantry staples, a good piece of meat, and a little confidence.

Simple Ingredients

This roast uses a handful of pantry staples, but each one brings big flavor!

  • Prime rib roast – The star of the show. A marbled cut that becomes incredibly tender and flavorful when roasted right.
  • Olive oil – Helps the seasonings stick and contributes to that delicious crust.
  • Kosher salt – Enhances the natural flavors and creates a crispy edge.
  • Black pepper – Adds a subtle kick and balances the richness of the meat.
  • Garlic – Infuses the roast with a mouthwatering aroma and savory depth.
  • Fresh rosemary and thyme – Earthy herbs that pair beautifully with beef.
  • Beef broth – A warm and comforting serving option that adds moisture and rich flavor.

How to Make Prime Rib Roast

While preparing prime rib may seem intimidating, it’s quite straightforward.

Preheat & Prep

Preheat your oven to 450°F (230°C). Pat your prime rib roast dry with paper towels this helps the seasoning stick and gives you that gorgeous crust.

Season the Roast

Rub the roast all over with olive oil. Then coat it generously with kosher salt, black pepper, minced garlic, and the chopped rosemary and thyme.

Roast at High Temp

Place the roast fat side up on a roasting rack in a large pan. Roast at 450°F for 15 minutes to sear and lock in flavor.

Lower the Heat & Continue Roasting:

After 15 minutes, reduce the oven temperature to 325°F (165°C). Roast until the internal temperature reaches 130°F for medium-rare (use a meat thermometer to check). This usually takes 1 hour 30 minutes to 1 hour 45 minutes depending on the roast size.

Rest the Roast

Remove the roast from the oven and tent it loosely with foil. Let it rest for at least 20 minutes before slicing. This helps the juices redistribute and keeps every bite tender.

Slice & Serve

Slice the roast into thick slices and serve with warmed beef broth or your favorite gravy.

  • Use a thermometer! It’s the best way to avoid overcooking. Trust me, it’s a game changer.

Instructions
